Bread and Butter Pickle
A product of the great depression when there was nothing else to fill a sandwich. A sweet and sour pickled cucumber, synonymous with burgers but great by themselves anytime of day or night.
Brisket Rub
Designed for any occasion, it can be used instantly, but is best left to marinate overnight.
Ideal for barbecue, grilling, smoking or roasting. Can be used as a seasoning for chips or to add that missing punch in a stew, braise, soup or gumbo.
Chilli Pickled Beans
Our personal favourite at home. With a delicious moreish heat, they retain the crunch and texture of the beans. Perfect as an accompaniment from charcuterie, rillettes and smoked meats, or inside a falafel.
They can also be chopped finely through a salad or scrambled eggs, for a little bit of oomph.
Drunken Blueberry Jam
A guilty pleasure of mine. The combination of wine, vanilla and sugar brings the blueberry into a world of its own.

Hot Stout Mustard

A hot seeded mustard with vapours that can bring a tear to your eye - reminiscent of horseradish or wasabi. The stout brings a body and mellowness after the heat, to create a complex rounded flavour. Perfect with steak, rillettes, sandwiches or your favourite charcuterie.
Mesquite Liquid Smoke
No long list of artificial ingredients - our liquid smoke is made from smoke and water, with a couple of things thrown in at the end to stabilise.
Used sparingly in braises, roasts, sauces, mayo or scrambled eggs, the options become endless. Mesquite was chosen as it pairs perfectly with everything from meats to vegetables to desserts.
Pickled Onions
A classic well-rounded and addictive snack. Colour from the onions turns the jar a lovely pink. To be enjoyed anywhere, any time of year.
Raspberry, Pomegranate and Apple Jam
Not many know it, but these three are the best of friends. When rounded out with raspberry, the sweetness from the apple works perfectly with a pomegranate’s bite.

Shichimi Togarashi
A classic Japanese table condiment combining sesame, chilli, citrus and poppy seed. It can take its place on the dinner table along side the salt and pepper or used as a dry rub in the kitchen - as seasoning for steak, charred corn, or quite literally anything that needs a little kick.
Smoked Bourbon BBQ Sauce
Done the right way. Without the sugary sweetness or vinegar that often comes with bbq sauce. You’ll find just the right level of heat and smoke, balanced with a touch of bourbon sweetness. It’ll take you way down to the swampy south. Great as a condiment or a marinade for sticky hot wings or ribs. Highly addictive!
